Jerusalem Artichoke

The Jerusalem artichoke is a plant whose tuber is commonly used in cooking. The plant is a type of sunflower, and the Italian word "girasole", meaning "sunflower," was misheard in the United States as "Jerusalem", leading to its current name. They can be eaten raw but are often consumed boiled or steamed, frequently as a substitute for other starchy vegetables like potatoes.
