Green Tea

Traditionally popular in China and Japan, green tea is less processed than black tea or oolong tea. Green tea is steamed, fried, or baked shortly after harvest to arrest the process of oxidization. This is what gives it a vegetal or grassy flavor. Green tea is becoming increasingly popular in North America.
