Stilton is a type of white, crumbly cheese, manufactured only in Derbyshire, Leicestershire and Nottinghamshire, and known for its distinctive smell and strong taste. It is named after the village of Stilton in Cambridgeshire where it first came to wide public attention through its availability at a busy coaching inn there. Stilton comes in several varieties: white Stilton (the basic cheese); blue Stilton (the most popular variety, where a marbling of blue mold has been encouraged to add a salty tang); and Stiltons incorporating a range of fruits, including apricot.
